Silicates are salts derived from silica or silicic acid, containing silicon, oxygen, one or more minerals, and possibly hydrogen. They lower free fatty acids in frying oils, immobilize enzymes, and clarify beverages. Calcium silicate also serves as an anti-caking agent in dry mixes, keeping powders free-flowing. They are inert, safe processing aids with long histories of use, and food-grade grades are tightly specified. Their inert, mineral nature makes them dependable across many food processes. They also appear in food-plant cleaning compounds, where their alkalinity aids soil removal.
