Salatrim
Salatrim is a family of structured triglycerides designed as reduced-calorie fats. By combining short- and long-chain fatty acids on the glycerol backbone in specific positions, manufacturers create fats that deliver the texture and mouthfeel of conventional fats with fewer absorbable calories. They are used in confectionery, baked goods, and other products where fat functionality matters but calorie reduction is desired. Regulatory approval defines their permitted uses, and labelling informs consumers about their special nature. Because their fatty acids are metabolized differently from conventional fats, they contribute fewer calories per gram. Food labels must declare them clearly so consumers understand they are eating a modified fat ingredient.
