Saithe
Saithe is an alternative term for coalfish or pollock, a North Atlantic whitefish in the cod family. It is a versatile, economical food fish sold fresh, frozen, and smoked, with firm flesh that suits frying, baking, and fish fingers. Like other gadoid species, its stocks are managed by quotas to keep fisheries sustainable. Correct labelling matters because it is sometimes substituted for more expensive whitefish, and consumers deserve to know which species they are buying. It is often sold under the name coley in Britain and is a staple of fish-and-chip shops and frozen fish products. Its mild flavour takes well to smoking and to strongly seasoned coatings, giving processors a flexible raw material.
