Saccharimeters are devices used for measuring the how far polarized light rotates when passing through a sugar solution. With a standardized instrument, this rotation is a function of the concentration of the sugar solution. In the sugar industry the rotation value, called Pol, is used as a measure of sucrose content because other sugars are present only at low concentrations. The method is rapid and non-destructive, making it a workhorse for process control in sugar refining and juice handling. Brewers and sugar refiners rely on it for rapid, direct readings of sugar concentration during processing.
