Rubber nettings
Rubber nettings are elastic nettings made with rubber thread, holding meat joints such as beef and ham together so they keep their shape in cooking. They give roasts a neat, uniform shape for even cooking and attractive slicing. Health concerns have centred on nitrosamines that can form from vulcanizing agents used in formulating the rubber, so food-grade nettings are manufactured to limit such substances. They are removed before serving and are strictly a processing aid, with food-grade manufacture limiting any migration of undesirable substances.
