Roes

Roes are the eggs of marine or freshwater fish. They may also refer to the entire gonads of female fish, while the gonads of male fish are known as soft roes. Marketed in many forms, they include caviar from sturgeon and its substitutes from other species, as well as salted, smoked, or dried roes eaten as delicacies or condiments. Because roes are nutrient-rich and often eaten with minimal cooking, freshness and hygienic handling are critical, and poor temperature control quickly leads to spoilage and safety risks.
