Ripeness
Ripeness is how fully developed and mature crops such as fruits or vegetables, or cheese, are for eating. For produce it brings the peak of flavour, colour, and texture; for cheese it marks the point where ageing has developed the intended character. Judging ripeness correctly is a central skill in harvesting, purchasing, and retailing, since under-ripe foods disappoint consumers while over-ripe foods spoil quickly.
