Rice vinegar

Rice vinegar is vinegar made from fermented rice. It is milder and gentler in flavour than most vinegars made from fruits or wines. Chinese versions come in white, red, and black; Japanese rice vinegars are usually nearly colourless. It is used in salad dressings, in sushi rice, in sweet-and-sour dishes, and in pickles, where its soft acidity seasons without harshness. Acidity level and clarity are the main quality markers, and storage away from light protects its delicate flavour.
