Pyrocatechol
A dihydroxybenzene, also known as catechol, with the two hydroxyl groups adjacent on the benzene ring. It is a strong reducing agent used in photography, chemical synthesis, and as an antioxidant intermediate. In food contexts it represents the simplest ortho-diphenol, the structural motif behind the antioxidant and browning chemistry of many plant phenolics such as chlorogenic acid and catechins. Enzymatic browning of cut fruits and vegetables proceeds through related diphenol intermediates, so understanding pyrocatechol chemistry illuminates both desirable antioxidant protection and undesirable discoloration. It is not itself a food additive, and handling follows standard phenol safety precautions.
