Propylene glycol
An aliphatic alcohol, synonym 1,2-propanediol, used primarily as a component of emulsifier systems. Other uses in foods include service as an anticaking agent, antioxidant carrier, flavoring solvent, and humectant, keeping products moist and flavors evenly dispersed. In food processing it is also employed in freezing media and as a solvent for colors and additives. Regulatory bodies recognize it as safe within specified limits, and it is metabolized readily in the body. Labels declare it where used, and manufacturers respect maximum levels in categories such as confectionery, icings, and whipped toppings.
