An alternative term for preservation, covering all methods used to keep food safe and stable over time. Whether by heat treatment, refrigeration, drying, fermentation, or the addition of permitted preservatives, preserving aims to stop or slow the microbial, enzymatic, and chemical changes that cause spoilage. Home preserving traditions such as canning, jam making, and pickling follow the same principles as industrial practice but demand careful attention to validated recipes, correct acidity, and adequate heat processing, since errors can allow dangerous organisms like Clostridium botulinum to survive. Commercial preserving is governed by detailed food-safety regulation.
