Pipecolic acid is a cyclic amino acid, the L-form of which occurs in plants and can be produced from L-lysine. It is found in various legumes and other plant materials and participates in plant stress responses and microbial metabolism. In food chemistry, pipecolic acid is of interest as a minor nitrogenous constituent that contributes to the amino acid profile of plant foods and fermented products.
