Persimmon juices
Persimmon juices are fruit juices extracted from persimmons, the fruits of Diospyros kaki. Persimmons supply moderate vitamin C, carotenes, and sugars, and most varieties are orange when ripe, resembling tomatoes in appearance. Some varieties taste astringent, especially when unripe, because of high tannin levels, while non-astringent types can be eaten fresh. In juice processing, astringency management is the key quality challenge: tannins must be reduced or removed through ripening, treatment, or blending to produce a palatable juice. Persimmon juice offers an attractive color and nutritional value, and careful extraction and clarification preserve its sensory appeal while ensuring microbiological stability through pasteurization.
