Penetration
Penetration is the process of entry and permeation of one substance into another item. In food analysis, penetration tests are widely used as a simple, rapid way to estimate the yield stress or firmness of a product, for example by measuring how far a probe sinks into a gel, spread, or fruit under a defined load. The concept also applies to heat penetration during thermal processing, where the rate at which heat reaches the cold point of a container determines the adequacy of pasteurization or sterilization, and to the penetration of salt, smoke, or marinades into meat and fish. In food engineering, measuring penetration behavior is therefore central to texture assessment, process validation, and quality control.
