Pemmican
Pemmican is a traditional concentrated food made by pounding dried meat and pressing it into small cakes with rendered fat and dried fruits. The dried meat is ground to a paste, mixed with melted fat and fruit ingredients, then shaped into cakes and dried in the sun, producing a calorie-dense, shelf-stable food. Originally made by North American Indigenous peoples, it later gained popularity as a practical ration for travelers and Arctic explorers because of its high energy content and keeping quality without refrigeration. In food science, pemmican illustrates preservation by dehydration and fat encapsulation, which limit water activity and oxidative spoilage. Its modern descendants include energy bars and survival rations designed for extreme environments.
