Pectic enzymes are the group of enzymes that break down pectic polymers in plant cell walls, driving fruit ripening and softening. They find wide application in fruit and vegetable processing, where controlled pectin degradation aids juice extraction and clarification. The family includes polygalacturonases, pectinesterases, pectate lyases, and pectin lyases, each attacking pectin by a different mechanism. In juice manufacturing, enzyme blends increase yield, reduce viscosity, and prevent haze.
