Palatinose
Palatinose is the commercial name for the disaccharide isomaltulose, an isomer of sucrose produced by bacterial transglucosylation, in which enzymes from Protaminobacter rubrum rearrange sucrose’s glucose-fructose bond from alpha-1,2 to alpha-1,6. This structural change makes it digest more slowly, giving a lower glycaemic response and prolonged energy release, while remaining tooth-friendly since oral bacteria ferment it poorly. It tastes about half as sweet as sucrose with a clean, sugar-like profile. Food manufacturers use it in sports nutrition, meal replacements, and reduced-glycaemic confectionery. Its stability under heat and acid suits beverages and baked goods, positioning Palatinose as a functional carbohydrate for energy management.
