Oak

Oak is the hard, close-grained timber of Quercus species, and one of the food world’s most influential flavouring woods. Cooks and producers use it to perfume foods by smoking meats and fish over oak, by maturing wines and spirits in oak barrels, and by adding chips, staves, or extracts as economical alternatives to barrels. The word also names the resulting sensory character: the smoky, vanilla, coconut, and spice notes that barrel-aged drinks acquire from lignin breakdown products, oak lactones, and toast-derived compounds. Coopers and winemakers pair oak origin, American versus French, and toast level to the flavour profile they want to build.
