Neral
Neral is the cis isomer of citral, an aldehyde monoterpene that pairs with its trans counterpart geranial to make up natural citral. It is a volatile flavour compound found in plant essential oils, notably lemongrass, lemon myrtle, and citrus peels, where it contributes the sharp, fresh lemon character. Like other aldehydes it is susceptible to oxidation and acid-catalysed degradation, which can generate off-notes in beverages, so flavourists protect it with encapsulation, antioxidants, and low-pH formulation care. Its level is a quality marker in lemongrass and citrus oils used for flavouring foods and drinks.
