Narazuke are Japanese pickled vegetables matured in sake lees, the nutrient-rich sediment left from sake brewing. Originally made from uri, a traditional cross between cucumbers and melons, they are now prepared with aubergines, small melons, radishes, and cucumbers. The sake lees drive a slow lactic-acid fermentation while imparting a distinctive sweet-savoury, alcoholic depth. The high salt content, acidity developed during pickling, and alcohol from the lees together create hurdles against pathogens, though commercial producers still validate pH, salt levels, and hygienic handling to ensure the safety of these artisanal pickles.
