Mullet is the common name for a large group of coastal fish, roughly eighty species of estuarine and marine fish in the family Mugilidae. They inhabit Atlantic and Pacific shorelines, estuaries, and lagoons, with some species migrating inshore into fresh water. Many are valued food fish, including the thin-lipped grey mullet Liza ramada, the golden grey mullet Liza aurata, and the striped or black mullet Mugil cephalus. Sold fresh as whole fish, gutted, or fillets, and as smoked or salted products, they are affordable, nutritious fish; the salted dried roes of some species, such as bottarga, are prized delicacies.
