Muffin cakes
Muffin cakes are round cakes which may be leavened with yeasts or baking powders and sweetened with sugar. They may be plain, or flavoured with fruits such as blueberries, dried fruits, nuts, chocolate, or savoury ingredients such as cheese. Their crumb structure depends on balanced leavening and gentle mixing: overmixing develops excess gluten and produces tough, tunneled texture, while correct batter viscosity gives an even, tender crumb. Commercial production standardizes batter viscosity, deposit weight, oven temperature, and baking profiles for uniform volume and eating quality, and packaging protects them from staling and moisture loss.
