Mousses
Mousses are creamy, frothy desserts typically made from fruit purees, chocolate, whipped cream, and beaten eggs, set with gelatin or by chilling. Savoury mousses are similar light-textured dishes made from meat, fish, or vegetables. Their delicate texture depends on stable aeration: properly whipped foams folded gently into the flavored base, then set undisturbed. Because many recipes use raw or lightly cooked eggs and dairy cream, commercial producers use pasteurized ingredients and keep mousses refrigerated with short shelf lives to control Salmonella and Listeria risks. Clean equipment and rapid chilling after preparation are essential for safety.
