Mixing
Mixing is the combining of food ingredients together by hand or using electric machines called mixers to achieve a uniform blend. It is one of the most fundamental food operations: it hydrates flours, develops gluten in dough, disperses leaveners, salt, and flavors, and builds emulsions in batters, creams, and dressings. Under-mixing leaves uneven texture and streaks of unmixed ingredients, while over-mixing can toughen dough or break emulsions. In plants, mixing times, speeds, bowl temperatures, and addition sequences are standardized and validated so every batch matches the target quality, and hygienic mixer design prevents contamination.
