Melomel
Melomel is a style of mead, the ancient fermented honey beverage, in which fruits other than grapes or apples are added alongside honey and water. Raspberries, cherries, blackberries, currants, and tropical fruits are popular choices, and the fruit may be added before, during, or after fermentation to shape the final flavor. Because it is a fermented alcoholic product, its production involves yeast management, sanitation, and control of alcohol content and residual sugar, and commercial makers follow the same labeling, taxation, and food-safety rules as other alcoholic beverages. Craft producers monitor fermentation temperatures and nutrient levels closely, since honey alone is low in the nitrogen that yeast needs for a clean, complete fermentation.
