Maturation
Maturation is an alternative term for ageing and ripening: the controlled holding of foods — cheeses, wines, cured meats, spirits, soy sauces — during which enzymatic, microbial and chemical reactions develop flavour, texture, aroma and colour. Temperature, humidity, time, oxygen exposure and microflora are managed precisely to the product: cheddar firms and sharpens in cool stores, wine softens in oak, whisky extracts wood compounds in casks. Proper maturation builds quality and value, while uncontrolled ageing causes spoilage, off-flavours and safety risks; producers validate maturation regimes, monitor the environment, and grade or test the product before release.
