Matsutake
Matsutake are wild Japanese mushrooms (Tricholoma matsutake), prized — especially in Japan, Korea and China — for their distinctive spicy-cinnamon aroma and firm texture, commanding very high prices for top grades. Mycorrhizal with pines, they cannot be cultivated and are foraged in autumn; they are usually exported either in canned or dried form, with fresh matsutake air-freighted at premium. As wild-harvested fungi they must be correctly identified by experts (toxic lookalikes exist), inspected for spoilage, maggots and heavy-metal uptake from forest soils, and processed promptly; canning requires validated heat processes and drying must reach safe water activity for storage.
