Maltol
Maltol is a pyrone flavouring compound with the systematic name 3-hydroxy-2-methyl-4H-pyran-4-one, occurring naturally in heated sugars, malt, coffee and confectionery. Used as a flavouring, its caramel-like aroma imparts a freshly baked flavour and aroma to bread, cakes, confectionery and beverages, and it potentiates sweetness perception, allowing sugar reduction. It also shows mild antioxidant and metal-chelating activity. Approved as a flavouring substance (with ADI/JECFA evaluation) for use at low levels, it is handled as a crystalline powder requiring dry storage; formulators balance its dose carefully, since excess can introduce a harsh, burnt note rather than the desired round caramel character.
