Lyes
Lyes are aqueous solutions of strong alkalis, generally sodium hydroxide (caustic soda) or potassium hydroxide (caustic potash), used in several food-processing treatments. Applications include debittering and curing olives, dipping pretzel dough to develop the characteristic brown crust and flavour, nixtamalising maize, peeling fruits, vegetables and canned produce (lye peeling), and Dutching cocoa. The alkali loosens skins, modifies texture and drives colour and flavour reactions; concentrations, temperatures and contact times are tightly controlled, followed by thorough rinsing or neutralisation so no harmful residues remain. Food-grade lye must meet purity specifications, and its corrosive nature demands strict handling controls.
