Litchis (Litchi chinensis, Sapindaceae) are subtropical fruits with a rough, pink-red, inedible rind covering translucent white, juicy, floral-scented aril flesh around a single glossy brown seed. The aril is a good source of vitamin C and B-vitamins (and traditionally credited with wider vitamin content). Available fresh, canned and frozen, litchis are eaten alone, in fruit salads, sauces, compotes, desserts and cocktails; they are also known as lychees, lechees, lichees and litchees. Fresh fruit browns quickly (pericarp browning) and needs prompt cooling; canned litchis in syrup are shelf-stable, and seeds should not be eaten.
