Liquid nitrogen
Liquid nitrogen (LN2) is nitrogen cooled to about −196°C at atmospheric pressure, used in food processing for rapid (cryogenic) freezing, freeze-grinding of spices (keeping volatiles and preventing fat smearing), crust-freezing, and creating dramatic culinary effects (instant ice creams, smoking desserts). Ultra-fast freezing forms tiny intracellular ice crystals that protect texture, drip loss and flavour far better than slow freezing — premium seafood, berries and ready meals benefit. Handlers must respect its severe asphyxiation hazard (oxygen displacement in confined spaces) and cryogenic-burn risk: ventilation, oxygen monitors, insulated gloves and face protection are mandatory.
