Laminarinases
Laminarinases are another term for endo-1,3(4)-β-glucanases and glucan endo-1,3-β-D-glucosidases — enzymes that hydrolyse the β-glucan linkages of laminarin and related cell-wall polysaccharides. In food and brewing they help degrade the β-glucans and cell-wall material that cause haze, viscosity and filtration problems — improving lautering, filtration rates and clarity in beer, and aiding juice extraction. Enzyme dosing must match substrate levels and process conditions (pH, temperature) to avoid unwanted side effects on texture or foam; commercial preparations (from Trichoderma, Humicola) must meet food-enzyme purity specifications.
