Izvara
A Bulgarian product made from cow milk coagulated with rennet and fermented with low levels of butter starters. The result is a fresh, mildly tangy product in the family of traditional fermented milks. As with all cultured-milk products, its safety depends on milk quality, hygienic processing, and proper refrigeration. Traditional products like izvara preserve regional dairy heritage while meeting current expectations for safety and consistency. Artisan dairies keep such traditions alive alongside current yoghurts. Its mild acidity makes it refreshing in warm weather.
