Iodine values
How unsaturated a fat or oil is, measured by the iodine absorbed in a set time — also called the iodine number. More double bonds mean higher values: drying oils score high, saturated fats low. The test helps identify oils, detect adulteration, and predict oxidative stability and drying behaviour in food and industrial applications. It remains a classic quality-control parameter in edible-oil refining, complementing current chromatographic fatty-acid analysis. Blenders use it to verify that incoming oil shipments match their specifications.
