Another term for inulinases: the enzymes (EC 3.2.1.7) that catalyse the endohydrolysis of 2,1-β-D-fructosidic linkages within inulin — inulin being a linear β-2,1-linked fructose polymer that stores energy in many plants. The product, fructose, has a high degree of sweetness and is valued in the dietetic foods and beverages industries. Enzymatic hydrolysis with inulinases converts inulin-rich crops such as chicory and Jerusalem artichoke into sweet fructose syrups, offering a clean alternative to acid-based fructose production. Immobilized-enzyme reactors make their industrial use continuous and economical.
