Ice cream mixes
Commercial bases that contain all the principal components of ice cream, blended and ready for freezing: milk, cream, sugar, flavorings, plus emulsifiers and stabilizers that control texture. Sold as pasteurized liquids or dry powders, they let parlors, restaurants, and small manufacturers produce consistent ice cream without formulating from scratch. The mix is pasteurized, homogenized to break fat into fine droplets, and aged cold for several hours so the fat crystallizes and proteins hydrate, steps that determine smoothness and resistance to melting. Liquid mixes need refrigerated storage and have a limited shelf life, while dry mixes trade some convenience for long ambient storage and are reconstituted with water or milk. Quality hinges on the balance of fat, milk solids, and stabilizers, which together control overrun, iciness, and creaminess.
