Hilsa
Tenualosa ilisha, a herring-family fish of the northern Indian Ocean that swims up into river systems for part of its life cycle. It is a popular and prized food fish in South Asia, marketed fresh or as a dried and salted product, and celebrated in regional cuisine for its rich, oily flesh. As with all fish, freshness, an unbroken cold chain, and hygienic handling determine its safety and eating quality, while salted and dried forms depend on correct salting levels and drying conditions to remain safe through storage.
