Hen meat
Spent layers supply hen meat, the meat from female chickens, often derived from hens that have completed their egg-laying period. Tougher and leaner than broiler meat, it is commonly used as an ingredient in chicken sausages and restructured products such as chicken nuggets, where comminution and seasoning overcome the texture. Using these birds recovers value from the egg industry. Food safety controls match those for other poultry: rapid chilling and hygienic processing throughout. Mechanical deboning recovers additional meat from the frames.
