Gyros

Gyros is a Greek meat product consisting of spiced pork slices, traditionally stacked on a vertical rotisserie and grilled as the spit turns, with cooked outer layers shaved off to order. The vertical roasting gives a characteristic combination of crisp browned edges and juicy interior, seasoned with oregano, garlic and other Mediterranean spices. Food safety hinges on the rotisserie reaching adequate internal temperatures in the shaved portions, proper refrigeration of the raw meat stack between service periods, and hygienic handling at the carving station, since the large exposed surface is vulnerable to contamination during long service hours.
