Driers
Driers are machines or devices for drying foods and other materials, an alternative spelling of dryers, encompassing tray dryers, tunnel dryers, spray dryers, drum dryers, and freeze dryers used across the food industry. Their selection depends on the product: heat-sensitive liquids suit spray drying, while delicate fruits favour freeze drying that preserves structure and nutrients. Effective dryer operation balances temperature, airflow, and residence time to reach target moisture quickly without scorching, case hardening, or nutrient destruction. Energy efficiency is a major concern since drying is among the most energy-intensive food operations, and hygienic design with cleanable surfaces prevents cross-contamination between batches of different products.
