They are made from very ripe, dried, botrytized or frozen grapes, or by fortification, giving intense honeyed, fruity flavours: Sauternes, Tokaji, ice wine and Port are classics. High sugar demands careful fermentation management to balance sweetness and acidity. Quality rests on grape selection and clean, slow fermentations, while labels must declare sweetness, alcohol and allergens such as sulphites.
