Desaturation
Desaturation is the biochemical step that makes a fatty substance less saturated by inserting double bonds into its chains. It decides whether a fat stays solid or flows at room temperature and shapes both nutrition and oxidation behaviour: more double bonds bring healthier profiles but faster rancidity. Oilseed breeders tune desaturation to create high-oleic oils prized for frying stability. Processors must then shield these unsaturated oils from oxygen, light and heat to carry quality safely through shelf life. Analysts measure the degree of unsaturation to predict both nutritional value and keeping quality.
