Cytophaga
Cytophaga is a genus of rod-shaped, Gram-negative bacteria that glide rather than swim, living in soils, decaying organic matter and water, many of them thriving without oxygen. Members of this group specialize in breaking down tough natural polymers like cellulose and chitin. A few species can spoil chilled foods, particularly fish and shellfish, where they produce slime and off-odours. Their hardy biofilms on wet equipment remind sanitation teams that drains and contact surfaces need regular, aggressive cleaning. Though rarely a direct safety hazard, their spoilage activity shortens shelf life and erodes consumer confidence in refrigerated seafood.
