Cuartirolo argentino cheese
Cuartirolo argentino cheese is an alternative term for Argentinean Quartirolo cheese, a soft, mild, high-moisture cow’s milk cheese traditionally made in the La Plata region of Argentina. It has a thin rind, a creamy and slightly elastic paste, and a gentle lactic flavour that deepens modestly with age. Like other fresh and soft cheeses, its high water activity demands pasteurized milk, hygienic manufacture and unbroken cold-chain distribution to guard against Listeria monocytogenes and premature spoilage. It is widely eaten fresh, in sandwiches and cooked dishes.
