Cryovac
Cryovac is the trade name for a process for packaging meat in which the product is sealed in plastic films and the air is removed with a vacuum pump. Drawing out oxygen suppresses the aerobic bacteria that cause spoilage and slows the oxidative browning that turns meat grey, greatly extending the chilled shelf life of primal cuts and retail portions. The tight, second-skin film also keeps moisture in and prevents freezer burn during frozen distribution. Cryovac-style vacuum packaging has become a standard of the modern meat supply chain, valued for safety, yield and presentation.
