Crescenza is a traditional Italian cow-milk cheese with a soft, rindless body whose texture and flavour range from smooth with a fresh, clean acidity to rubbery, mushy, and overly sour when over-ripened. It is best ripened for no more than about ten days and eaten soon after, at the peak of its delicate lactic character. The short ripening window makes production scheduling and cold-chain speed critical: delays push the cheese past its prime, while pasteurized milk and starter-culture control keep its gentle acidity safe and consistent.
