Crepes
Crepes are thin French pancakes made from a fluid batter of flour, eggs, salt, milk, and water, cooked briefly on a hot griddle until lacy and pliable. They are filled with sweet or savoury ingredients, from sugar and lemon to ham and cheese, and rolled or folded for service. Crepes suzette, the famous dessert variant, are warmed in an orange-butter sauce with orange liqueur and flamed tableside. Batter resting, pan temperature, and thin, even spreading determine their characteristic tenderness, while filled crepes served commercially require the same time-temperature discipline as other ready-to-eat foods.
