Coriander
Coriander, Coriandrum sativum, is an annual herb of the carrot family grown for two distinct harvests: the dried ripe seeds and the fresh green leaves. The seeds bring warm, citrusy notes to curry powders, pickling blends, and sausage seasonings, and yield an essential oil used in flavourings. The leaves, called cilantro in the Americas, season salsas, salads, and Asian dishes with bright, pungent freshness. Processors test seed lots for volatile-oil strength and microbial cleanliness, and label seed and leaf as separate ingredients.
