Coconut milk
Coconut milk is the white liquid prepared by squeezing freshly grated coconut flesh, yielding an opaque emulsion relatively high in fat. It is indispensable in Southeast Asian curries, desserts, and confectionery, where its rich, sweet profile defines dishes. Canned versions are homogenized and heat-treated for shelf stability, and fat content varies across light, regular, and premium grades. Fresh-pressed milk is highly perishable and needs refrigeration, while hygienic extraction and prompt processing protect it from the rapid spoilage its richness invites.
