Coagulum

A coagulum is the curd that forms when casein precipitates from milk under the influence of acids or rennets — the defining moment of cheesemaking. This protein network entraps fat globules and moisture, and its firmness at the cutting point dictates cheese yield and final moisture content. Cheesemakers read the coagulum like a gauge: cut too early and whey escapes with the fat, too late and the curd turns rubbery. Monitoring its development, by touch, by instrument, or by timing, is among the oldest and most consequential skills in dairying.
